Cinnamon swirl banana bread is the best banana bread recipe ever. A ribbon of sweet cinnamon sugar runs through this classic quick bread for a breakfast or snack you’ll love.
- 2 1/2 cups of all purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 3 1/2 tsp baking powder
- 1/4 tsp salt
- 3 tbs oil
- 1/3 cup milk
- 1 egg
- 2–3 medium over ripe mashed bananas
- 1 tsp vanilla
For the swirl
- 1/4 cup granulated sugar
- 1/4 brown sugar
- 1 heaping tsp cinnamon
Preheat the oven to 350.
Once the oven is hot, you can start on the wet ingredients. In a large mixing bowl, mash the peeled bananas either with a hand mixer, a fork or a potato mixer. When they are lightly mashed, add the sugars, oil, milk, vanilla and egg to the bowl with the mashed bananas. Use a hand mixer to mix together until everything is combined evenly.
In a separate bowl, whisk together the flour, baking powder and salt. Pour the dry ingredients into the wet ingredients in 2 to batches, mixing quickly with a hand mixer to combine. When you have the batter ready to go, set it aside.
For the swirl stir together 1/4 cup of both brown and white sugar with 1 heaping tsp of cinnamon in a separate bowl.
Generously spray a loaf pan with nonstick cooking spray. Pour half of the banana bread batter evenly across the loaf pan. Then evenly spread the cinnamon sugar mixture over top of the batter. Pour or spoon the remaining batter across the the top of the cinnamon sugar layer
Now you put the whole thing in the oven and bake for 55- 65 minutes or until a toothpick inserted in the middle comes out clean.
Let cool completely prior to cutting.
Do NOT sub whole wheat flour.
Cook time may vary if you use a metal loaf pan. For a metal loaf pan increase the temperature to 360 and start at 55 minutes.
