Chipotle Pumpkin Cheese Dip

Ingredients

  • 1 15 ounce can pumpkin
  • 1 cup heavy cream
  • 4 cups shredded cheddar or cheddar jack cheese
  • 1 adobe pepper
  • 1-2 jalapeno peppers*
  • 1/2 red onion diced
  • 4 cloves of garlic pressed
  • 3 tablespoons butter
  • 1 Tablespoon chili powder
  • 1/2 tablespoon cumin
  • Salt and pepper to taste

Instructions

  • Melt butter in pot over medium heat.
  • Dice the onion, peppers, and press the garlic
  • Cook over medium heat for about 5 minutes.
  • Add pumpkin and seasonings and stir to combine
  • Add cream and stir to combine
  • In half cup portions add cheese, mixing until fully incorporated.
  • Reduce heat to low and cook for 5 minutes stirring occasionally.
  • Serve hot with chips for a queso like dip. Or chill and let firm to serve like a cheese ball.
