Easy Ham and Cheese Frittata (Crustless Quiche)
Ham and cheese frittata is an Italian version of a crustless quiche. This easy breakfast or brunch main dish feeds a crowd and is perfect for a holiday brunch gathering or any weekend morning!

6 eggs 1/4 c heavy cream 2 cups of chopped ham 1 cup of shredded cheese 1 onion chopped 1 clove of garlic pressed salt and pepper to taste enough oil to cover the bottom of an 8" cast iron skillet.
Chop the ham into roughly equal sized cubes and dice the onion. Remove any fatty piece of ham and discard. Set aside.
Crack the eggs into the mixing bowl and whisk in the cream, salt and pepper and pressed garlic.
Then, fold in the chopped ham and shredded cheese.
Pour enough olive oil into the bottom of your 8" cast iron skillet to lightly coat the bottom of the skillet.
Then, pour the egg mixture into the skillet.
Bake it at 350 for 30 minutes. The eggs should be set.
Remove from the oven and let it rest for 5 minutes prior to cutting and serving. Enjoy!
