Easy Ham and Cheese Frittata (Crustless Quiche)

Ham and cheese frittata is an Italian version of a crustless quiche. This easy breakfast or brunch main dish feeds a crowd and is perfect for a holiday brunch gathering or any weekend morning!

Ingredients

  • 6 eggs
  • 1/4 c heavy cream
  • 2 cups of chopped ham
  • 1 cup of shredded cheese
  • 1 onion chopped
  • 1 clove of garlic pressed
  • salt and pepper to taste
  • enough oil to cover the bottom of an 8" cast iron skillet.

Instructions

  • Chop the ham into roughly equal sized cubes and dice the onion. Remove any fatty piece of ham and discard. Set aside.
  • Crack the eggs into the mixing bowl and whisk in the cream, salt and pepper and pressed garlic.
  • Then, fold in the chopped ham and shredded cheese.
  • Pour enough olive oil into the bottom of your 8" cast iron skillet to lightly coat the bottom of the skillet.
  • Then, pour the egg mixture into the skillet.
  • Bake it at 350 for 30 minutes. The eggs should be set.
  • Remove from the oven and let it rest for 5 minutes prior to cutting and serving. Enjoy!
