Ingredients
4applescut in half with core removed
1/2cupof oats divided
1tbscinnamon
1/2tspnutmeg
1/8tspsalt
1tbshoney or maple syrup divided
1cupapple cider
Instructions
Prepare the apples.
Cut the apples in half and scoop out the seeds and core to create a cavity in each apple. When the apples are hollow, sprinkle each with cinnamon.
Mix the filling.
In a small bowl, mix together the oats, half of the maple syrup, spices, chopped walnuts if using, and 3 tablespoons of apple cider.
Stuff the apples.
Once the filling is prepared carefully spoon a heaping tablespoon into each hollowed out apple. You may have to use a little more or a little less depending on the size of the apple you are using.
Pressure cook.
Pour the remaining cider into the bottom of the Instant Pot liner. Then, set the trivet inside the Pot. Carefully place each apple on the trivet, stuffed side up. Secure the lid on the Pot. Pressure cook on high for 1 minute. Let the pressure naturally release for 5 minutes, then quick release the rest. Open the lid and carefully remove the apples. Sprinkle with walnuts if using. Serve and enjoy!
