Buffalo Cauliflower Dip

Buffalo cauliflower dip is an easy vegetarian alternative to buffalo chicken dip that's just as delicious. This yummy dip recipe makes the perfect appetizer for parties and a great snack for movie night or watching the game.

Ingredients

  • 1 full head of buffalo cauliflower
  • 8 ounces of cream cheese or mascarpone cheese
  • 2 cups of shredded cheddar cheese divided
  • 3/4 cup of half and half

Instructions

  • Preheat your oven to 350. Spray a 2 quart baking dish (8x8 or a small rectangle baking dish) with nonstick spray. Set aside.
  • Add your cooked buffalo cauliflower, cream cheese, half of the cheddar cheese and 3/4 cup of your half and half into a food processor. Pulse until creamy. Pour the creamy mixture into a prepared baking dish. Top with remaining cheese. Bake at 350 for 20-25 minutes or until the mixture is hot and bubbly. Serve with chips, pita wedges, and veggie slices. Enjoy!

Notes

You can top with blue cheese crumbles if desired. I also like a handful of chopped scallions for extra freshness.
