Ingredients

  • 4 large eggs separated
  • 6 tbs sugar divided
  • 2 tsp vanilla extract divided
  • 3.5 c milk
  • 1 c canola oil
  • 3.5 c flour
  • 6 tsp baking powder
  • 1 tsp salt

Instructions

  • Preheat the waffle maker.
  • In a bowl, add egg whites, 3 tbs of sugar, and 1 tsp of vanilla extract. Using a hand mixer or a stand mixer with the whisk attachment, whip the egg whites until stiff peaks form.
  • While they mix, in a large bowl, whisk together flour, baking powder, and salt. Set aside.
  • In a medium bowl, beat together the 4 egg yolks, milk, 3 tbs sugar, 1 tsp vanilla, and oil.
  • Pour wet ingredients into the dry ingredients and mix until combined. Be careful not to over mix.
  • When the wet ingredients and dry ingredients are mixed, gently fold the egg white mixture into the rest of the batter.
  • Spray the top and bottom of your waffle maker with nonstick spray.
  • Use a ladle or measuring cup to pour enough batter into the maker to fill about half to three quarters of the waffle iron with batter.
  • Cook for 3 to 4 minutes or until steam stops.*
  • Repeat until done.

Notes

*Cook times will vary by waffle maker. Most waffle makers have an indicator light that will tell you when the waffles are done.

You can freeze leftover waffles by storing cooled waffles in freezer bags.
