Salad with Strawberries and Candied Pecans

For the sweet and spicy candied pecans 1/4 cup white sugar 1 cup warm water 1 cup pecan halves 2 tbs brown sugar 1 tbs chili powder 1/8 tsp ground red pepper For the Salad 1 cup of sliced strawberries 1/2 large cucumber sliced 1/2 red onion sliced 6 cups of greens of your choosing 1/4 cup sweet and spicy candied pecans For the dressing 1 cup of balsamic vinegar 1/2 cup of olive oil 1/4 tsp salt 1/4 tsp black pepper 1 clove of garlic crushed 1 tbs Italian seasoning pinch sea salt
For the sweet and spicy candied pecans
Preheat oven to 350.
Stir together sugar and water add pecans and soak for 10 min.
Drain discarding sugar water.
Combine 2 tbs brown sugar, chili powder and red pepper. Add pecans tossing to coat.
Spray a cookie sheet with nonstick spray and place pecans on sheet.
Bake for 10 minutes.
Let cool completely then scrape pecans off of pan.
Store in a sealed jar. The pecans will stay good for up to 2 weeks.
For the Salad
Chop all the veggies and slice the strawberries.
Top greens of your choice with the red onion, cucumber, strawberries, and sweet and spicy candied pecans.
Toss with homemade vinaigrette.
For the dressing
Whisk all the ingredients together .
