Line an 8x8 baking dish with wax paper. Set aside.
Add 1 stick of melted butter, 1 and a half cups of creamy peanut butter, 3 cups of powdered sugar, and 1 tsp of vanilla to a stand mixer and mix until the peanut butter mix comes together into a soft semi solid state. Press the mix into the bottom of the prepared baking dish.
Pour 1 cup of heavy cream into a small sauce pan and heat on medium heat until the edges of the cream begin to gently bubble. Meanwhile pour 1 cup of chocolate chips into a heat safe bowl. When the cream bubbles around the edges pour the cream into the bowl with the chocolate chips. Let the chocolate cream mix stand for 1 minute. Then stir thoroughly to combine. Keep stirring until the mixture is smooth. Pour the mix over the peanut butter mix. Let set in the fridge for at least two hours but up to overnight before cutting into squares. Sprinkle with sprinkles if desired.
Notes
*Make sure to use regular peanut butter, not natural peanut butter as the bars won't set properly.
