Beat the eggs in a bowl wide enough to dip sandwiches into. In a separate bowl, whisk together Parmesan cheese, bread crumbs, flour, and seasoning.
Assemble the sandwich by putting about 4 ounces of mozzarella cheese in between 2 slices of bread. Dip entire sandwich in eggs, then dip in the breading mixture. Repeat with other 3 sandwiches.
In a deep pan, heat the oil up over medium high heat. Fry each sandwich for 3-4 minutes per side or until golden brown. Serve hot and enjoy.
Notes
* These ingredients I used gluten free, however feel free to use non gluten free.
** You may need more olive oil, pending pan size. Use enough to completely submerge the sandwiches.
