Ingredients

  • For the Raspberry Simple Syrup
  • 1 cup of sugar
  • 1 cup of water
  • 1 cup of raspberries
  • For the Cocktails
  • 2 cups champagne
  • 2 ounces of raspberry liquor or raspberry vodka
  • 2 ounces of raspberry simple syrup*
  • Raspberries to garnish
  • sugar to garnish

Instructions

For the simple syrup**

  • Stir the sugar and water together in a small sauce pan over medium heat until sugar dissolves.
  • Add raspberries and reduce heat to medium low.
  • Bring to a slow simmer, stirring regularly.
  • Let simmer until the raspberries break apart.
  • Pour into a jar by holding a strainer over the jar and pressing the remaining raspberries against the strainer with a spoon.
  • Cover and refrigerate.

For the cocktails

  • Dip the rim of 2 champagne glasses in a small bowl or dish of water.
  • Gently press the damp rims of the champagne glasses in a shallow bowl of sugar.
  • Add one ounce of raspberry liquor and one ounce of raspberry simple syrup to each glass.
  • Pour a cup of champagne into each glass.
  • Stir and enjoy.

Notes

It helps to make the simple syrup ahead of time so it's chilled.
Chill the champagne and liqueur first.
You will have enough raspberry simple syrup to make about 10 cocktails.
