What I’m Wednesday 11

Welcome to the place where I share what I’m up to each week and a bit of my real life outside of the blog.

Reading

I haven’t started a new book since I finished up How to Walk Away. I keep saying this is it. I’m going to read The Nightingale by Kristin Hannah next. BUT…. I found this book called The Bakeshop at Pumpkin and Spice and I just couldn’t help myself. I believe that will be my next read because I am in full on fall mode.

Watching

Speaking of full on fall mode. The other day when it was gray and rainy and cool here and I literally was swooning over the day because it was finally appropriate for me to cuddle up under a fuzzy blanket near my fireplace, I watched all the fall things.

I definitely put on You’ve Got Mail because that first fall day has me quoting Meg Ryan like none other. “Don’t you just love New York in the fall?” Yep, definitely don’t live in New York or even a city but still. LOVE. And all the cute fall scenes like when she bumps into Tom Hanks in the market when she’s shopping for Thanksgiving. I live for it.

And of course, I had my inaugural Hocus Pocus viewing. That will never not be a thing I do. Plus, my daughter unprompted wanted us to watch It’s the Great Pumpkin Charlie Brown and A Charlie Brown Thanksgiving. I was so proud of my little protege.

Oh- and I’m still watching the last season of Jane the Virgin. It’s so good! Did you watch? I’m not at the end yet, but yay team Raph! And I absolutely love Rogelio and his tail. LOL forever.

Eating

I made these really delicious pesto stuffed peppers for Kim at Low Carb Maven. I made a few versions of the recipe so it was pesto chicken peppers for days. That’s ok by me because pesto is one of my favorite things and the stuffed peppers are comforting while still being sort of summery. The perfect bridge meal between summer and fall. Plus since they are low carb, I feel better about life knowing I’m going to be eating apple cider donuts soon and remaking these easy pumpkin donuts.

Also eating French onion chicken. Yum. Yet again a nice comfort food change of pace from all the summer food.

Drinking

Still loving all the pumpkin drinks forever, but have been sipping on this delicious white apple sangria for days. It’s so good! It’s sweet and refreshingly crisp. Seriously the best cocktail I can think of for early fall.

Also been into my chai teas lately. Yes, I still mainline coffee like it’s my life force because it kind of is, but I’ve been drinking a cup of pumpkin chai almost every night. It is the season.

Doing

Sunflower mazes! We went to the Sussex County Sunflower Maze last week and it was incredible. Truly the most gorgeous thing I’ve ever seen. Think sunflowers as far as the eye can see. I might do a photo post later this week because it was just unbelievable. Would you guys want to see?

Also, heavily perusing fall decor. I went to Homegoods over the weekend and got lost in all the soft fall blankets. I still haven’t found my way out of them.

Lastly, squeezing in naptime. My son has been sleeping for garbage lately so I nap whenever humanly possible. See above about coffee being life.

That’s it for me this week! What have you been up to?
