How to Make the Best Corn Chowder... the Instant Pot!

Ingredients for Corn Chowder

Corn Onions Garlic Potatoes Peppers Butter and Flour Broth Cheese Half and Half Spices

Saute the potatoes and peppers

Add the potatoes, peppers, and onions to the inner liner of the Instant Pot. Saute them for 3 to 5 minutes or until the peppers and onions begin to soften.

Pour the broth into the Instant Pot.

Once the onions and peppers have begun to soften, pour in the veggie broth. Secure the lid and pressure cook.

Pressure cook the potatoes.

When the pot beeps, do a quick release and then remove the lid. Once you've removed the lid, the broth base will look like this.

Add the corn.

At this point add the corn to the broth and turn the Instant Pot back to saute mode.

Make it chowder!!

Now make a roux by stirring together flour and water. When it forms a paste, stir it into the Pot. Bring the Pot to a boil. Then hit cancel and stir in the half and half.

Get cheesy!

Stir in cheese and let the corn chowder cool and thicken for a few minutes.

Serve the Instant Pot Corn Chowder!
