Prep the veggies.

Slice the cucumbers and cut the tomatoes in half. If you are using whole olives, slice them. Chop the romaine. Drain and rinse the chickpeas.

Assemble the Greek Salad.

Layer the chopped lettuce in the bottom of a large salad bowl. Add the rest of the veggies and the toasted pita wedges. Top with hummus.

Whisk together all the ingredients for Greek salad dressing or add them all to a food processor and pulse until mixed. Pour it over the salad.
