A full turkey Unsalted Butter Garlic- lots and lots of garlic! Fresh herbs Citrus zest Salt and pepper

Food process the butter, herbs, and a portion of the garlic until smooth to make a garlic herb butter that will baste the turkey.

Add cut heads of garlic to the bottom of a roasting pan. Set the the roasting rack over the pan.

Rub the garlic herb butter onto and under the turkey's skin.

Roast the turkey, breast side down for the first 45 minutes at a higher heat. After 45 minutes, turn the bird over, lower the heat and baste the bird in the butter drippings. Baste regularly.

When the turkey reaches 165 degrees, take it out of the oven and let it rest before carving.

Serve with gravy and enjoy with your favorite sides!
