Tortellini Caprese Skewers

Ingredients for Tortellini Caprese Skewers

Tortellini Cherry Tomatoes Mozzarella Basil Balsamic Vinegar Honey

Cook the tortellini.

Cook the tortellini until just tender. Drain the tortellini and let it cool.

Assemble the skewers.

Thread a toothpick through a cherry tomato so the tomato is on one end. 

Assemble the skewers.

Thread a toothpick through a mini mozzarella ball, pushing the mozzarella ball so it is up against the tomato. Follow this with a rolled up basil leaf if desired.

Cap the skewer with tortellini.

Push a piece of tortellini onto the skewer so it is flush against the cheese. Repeat until you've made all the skewers.

Make the balsamic glaze.

Whisk the balsamic vinegar and honey together in a sauce pot over medium low heat. Let it cook down until it coats the back of a spoon.

Drizzle the tortellini skewers with balsamic.
