Melt the wet ingredients.

Whisk the pumpkin puree, maple syrup, milk, coconut oil and brown sugar together over low heat until well combined.

Combine the dry ingredients.

Whisk the rolled oats, spices, and nuts together in a separate bowl until well combined.

Stir the wet and dry ingredients together.

Pour the pumpkin mixture onto the oat mixture. Stir it together until well combined and it begins to clump together.

Bake the pumpkin granola.

Spread the unbaked pumpkin granola out onto a tray lined with foil and sprayed with cooking spray. Bake, stirring occasionally, until golden brown.

Let cool and enjoy!

Let the pumpkin granola cool fully on the tray. Then either store it in an airtight container or serve it with milk, yogurt, or as a snack by itself.
