My little Goose. She’s currently 4 and the pickiest person I know. There’s not much she likes. Waffles. Chicken nuggets. The taste of my tears.

Ok not really on that last point. At least I hope.

I can add one more thing that she really likes: this red, white, and blue skillet s’mores dip. In fact, after I let her have at it, she proclaimed, “Mommy! This is the best thing you’ve ever made.”

While I was making it and getting ready to photograph it, she hung around the table where I do all my food shooting like a little vulture. She was ready to suck up any dropped marshmallows. She was a sprinkles thief. The little monkey tried to be sneaky and failed miserably.

Even with wrangling a less than sneaky preschooler and holding a baby while I was making this dip, I can tell you it is so easy to make. I used an 8 inch cast iron pan, and melted two tablespoons of butter in it, mainly so the chocolate wouldn’t stick. Then I microwaved 1 cup each of white chocolate chips, red candy melts, and blue candy melts.

Side note: have you ever had the combination of melted candy melts and melted white chocolate? It’s surprisingly good. I knew it would be yummy but I was surprised by just how yummy it is. The Wilton candy melts are kind of vanilla flavored, which just mixes beautifully with the light richness from the white chocolate. So good.

Then I poured the melted candy into the skillet and swirled the melted candy together just to make it pretty. You definitely don’t have to do that part. Last thing, I topped it with marshmallows and baked it in a very hot oven for 2 and a half minutes. Just til the tops of the marshmallows get a little brown and puffy. And then? Sprinkles of course to make it extra festive for Fourth of July.

Tips for Making Red, White, and Blue Skillet S’mores Dip

  • You don’t have to melt the candy or white chocolate ahead of time in the microwave. Instead you could just add the candy melts and white chocolate chips to the skillet and put it in a 450 degree oven for about 10 minutes. Then pull the skillet out and top with marshmallows and put it back in the oven for another 2 minutes. If you choose to do it this way, just know the white chocolate and candy will not melt as smoothly. It’ll still taste good though.
  • Be careful not to overcook the chocolate or the candy in the microwave. I microwaved them in small bowls, one at a time, for 20 seconds at a time. Then I’d stir and put it back in the microwave for another 10 seconds, stir, and repeat until the candy melted. If you overcook the chocolate or the candy it will get clumpy and hard.
  • If you don’t have a cast iron skillet, you could make this in an 10×10 baking dish. However, cast iron holds its heat very well, so the dip will stay melty longer in a cast iron pan than it will in a baking dish.

I served this dip with graham crackers, because I am kind of boring, but my husband and daughter had other ideas. Aside from graham crackers they dunked strawberries, marshmallows, Oreos, and chocolate chip cookies into this. Rice Krispie treats and other fruits would also be fun for dipping.

Red, White, and Blue Skillet S’mores

Description

Skillet red, white, and blue  s’mores dip is the perfect summer treat. This easy fourth of July dessert comes together in under ten minutes. A great crowd pleaser.


Ingredients

Scale
  • 2 tbs butter or coconut oil
  • 1 c white chocolate chip
  • 1 c red candy melts
  • 1 c blue candy melts
  • enough large marshmallows to completely cover the top of the skillet (about 25)
  • sprinkles (optional)

Instructions

Preheat the oven to 450.

Melt the butter or coconut oil in an 8″ cast iron skillet.

When the butter is melted, melt the white chocolate chips in a small bowl by microwaving for 20 seconds and then stirring. Microwave in 10 second increments and stir in between until the chocolate is melted and smooth. Repeat this with the red and blue candy melts. Pour melted candy and chocolate into the buttered skillet. Swirl to make a pretty pattern. Top with large marshmallows. Bake in a 450 degree oven for 2-3 minutes or until the marshmallows puff up and brown slightly. Top with sprinkles if desired and serve immediately with graham crackers and other dippers.
