Oven Baked Apple Pancake



For Apples

  • 1 cup brown sugar
  • 3 teaspoons cinammon powder
  • 4 apples – Granny Smith or other crisp baking apple

For Pancake

  • 3/4 cup gluten free, all purpose flour blend
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup Pumpkin Spice Creamer (or 1 cup milk if you don’t have a creamer)
  • 1 egg
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • 1 cup brown sugar


  1. Cut apples into small pieces, use an apple slicer to get wedges and cut the wedges apart.
  2. Add apples, brown sugar, and cinnamon to a pan and turn heat up to medium
  3. Cook apples for about 10 minutes or until they are no longer firm and a sticky syrup has formed.
  4. While apples cook, combine the dry ingredients ( flour, baking soda, baking powder, and cinnamon) in a medium bowl.
  5. Combine the wet ingredients (creamer, brown sugar, egg, and vanilla) in a small bowl and whisk.
  6. Add wet ingredients to dry ingredients and whisk until combined.
  7. Remove apples from heat.
  8. Spray a shallow, oven-safe dish with non-stick spray.
  9. Add apple mixture to bottom of pan and spread out evenly.
  10. Pour batter on-top of apples.
  11. Bake for 45-50 minutes or until a fork comes out clean.
