Happy Christmas in July! Or is it Merry Christmas in July?

I can’t let this occasion pass by without celebrating it with something. In years past I have done entire weeks devoted to bringing a bit of festive cheer to Christmas in July.

A few years ago we did cranberry barbecue ribs and frozen hot chocolate floats. Then we did hot chocolate no churn ice cream, no bake cookie dough bites, and these adorable melting snowman s’mores.

This year, it’s cocktail time! We need a summery yet festive and pretty cocktail to sip on while we watch the last bit of Hallmark Channel’s Christmas in July programming.

This Christmas drink with rum blends together the minty flavor of a mojito with the coconut creaminess of coquito and a touch of pina colada esque feel minus the pineapple juice.

It’s like those three drinks got together with Christmas and had a love child.

And making this Christmas drink with coconut rum and mint that brings the perfect blend of summer flavors and a hint of holiday sparkle.

It has with so much coconut flavor and just a hint of mint for that whisper of minter- er winter- this time of year.

And a sprig of fresh rosemary as garnish hints of Christmas trees and evergreens.

What do you need to make this Christmas drink with rum and mint?

I tested quite a few combinations of coconut drinks before I landed on this. You only need a handful of ingredients to get creamy coconut taste with a little background of minty flavor. To make these drinks you need:

  • chilled canned coconut milk
  • coconut rum
  • simple syrup
  • mint leaves
  • fresh rosemary

That’s it!

How do I make this Christmas rum cocktail?

Start by making the simple syrup by bringing equal parts water and sugar to a simmer on the stove. Instead of making a plain simple syrup, I added 3 crushed mint leaves to this mix so it infused with a hint of mint. But if you want more mint flavor in your drink feel free to add more mint leaves! I didn’t want it too strong or else it would overpower the coconut for me but mint lovers might differ. Let it simmer for 1 minute, stirring until the sugar dissolves. Remove from the heat and let it cool.  You can do this part ahead of time.

When you have the minty simple syrup made, you can mix up your drink. To make, mix together 2 chilled cans of coconut milk, half a cup of coconut rum, and a quarter cup of the mint simple syrup. Shake it in a shaker with ice and pour into glasses rimmed with sugar.

Then garnish with a sprig of rosemary and extra fresh mint and you’re on your way to sipping this festive cocktail and dreaming of a white Christmas on the beach.

Christmas Drink with Coconut Rum and Mint

Ingredients

  • 1/4 cup* mint simple syrup recipe follows
  • 1/2 cup coconut rum
  • 2 cups of chilled coconut milk
  • fresh rosemary and mint to garnish

Instructions

  • For the mint simple syrup
  • Muddle 3 fresh mint leaves with 1/2 a cup of sugar until the mint is just crushed slightly and releases its flavor. Add to a small sauce pan with 1/2 cup of water. Cook over low heat until the sugar dissolves, stirring constantly. When sugar dissolves, remove from the heat and pour into a strainer over a jar. Let cool.
  • For the drinks, add all the ingredients to a shaker with ice. Shake until the shaker is frosty, about 10 seconds. Pour into sugar rimmed glasses and garnish with fresh rosemary sprigs and mint leaves.

Notes

Feel free to adjust the amount of simple syrup to suit your desired sweetness level. If you want it sweeter use a bit more, if you want it less sweet use less.
You can also make the mint simple syrup more minty by adding more mint leaves.
