Air fryer roasted tomato bruschetta is a yummy spin on the classic recipe. The delicious caramelized balsamic cherry tomatoes come together really quickly in the air fryer. Spooning the topping on toasted bread makes a lovely light breakfast, brunch, lunch or appetizer.
- 10 ounces of cherry tomatoes, halved
- 1 tablespoons of olive oil
- 1 tablespoons of balsamic vinegar
- 2 cloves of garlic, pressed
- salt and pepper to taste
- shaved or shredded Parmesan cheese
- 1/2 cup of loosely packed basil
- loaf of French bread, thinly sliced
Arrange the sliced bread in the basket of the air fryer so they aren’t touching. Air fry the bread at 400 for 1 minute.
Set the bread aside.
Then, in a medium bowl mix together the halved cherry tomatoes, balsamic, olive oil, pressed garlic, salt and pepper. Toss them together gently. Then pour the mixture into the basket of your air fryer. Air fry at 350 for 8 minutes, shaking the fryer gently, two or three times during cooking.
When the tomatoes are done, spoon the tomatoes out onto the toasts. Top with chopped fresh basil and Parmesan cheese if desired. Enjoy!
