Hi! I made you a pink drink! A pink sparkly drink! A raspberry champagne cocktail to be exact.

This drink couldn’t be more my favorite thing ever.

It’s pink! It’s sparkly!

It’s pretty much the inside of my head and I love it so much.

They are just so pretty and so full of raspberry flavor from Raspberry Simple Syrup for Drinks and raspberry liqueur.

Cocktails should be pretty since they are often a special occasion thing.

And what’s pretty in my mind?

Sparkles and pink obviously.

And unlike some of my other pink drinks, this one feels very Valentine’s Day to me because raspberry goes so perfectly with all the yummy chocolatey desserts like this no bake chocolate cheesecake with Oreo crust.

  • Raspberry simple syrupThis basically amounts to a combination of sugar, water, and raspberries.
  • Raspberry liqueur or vodka– You can use either a raspberry liqueur like Chambord or a raspberry flavored vodka.
  • Sparkling wine– Yes, technically it’s sparkling wine and not champagne on a technicality that champagne comes from a specific region in France. But you can use any white sparkling wine you like from Prosecco to Brut but I do recommend using a drier variety.
  • Garnish– I like to rim the glasses with sugar and pop a few extra raspberries in.

Kitchen supplies for this are pretty minimal though a jigger is helpful to measure the liqueur and I love these stemless champagne glasses.

How to Make Raspberry Champagne Cocktails

1. Make the raspberry simple syrup.

Make the raspberry simple syrup and strain out the remaining solids in the raspberries.

Combine equal amounts of raspberries sugar and water into a small saucepan and cook them over medium heat, stirring regularly, until the raspberries fall apart and the sugar dissolves.

Strain the syrup, discarding the solids, and transfer it to a jar.

Chill in the fridge until cool.

2. Rim the glasses with sugar.

Dip the champagne glasses in water and sugar to rim the glasses.

Dip the glasses into a shallow bowl of water to dampen the rim of the bowl.

Then, gently press the damp glasses into a shallow bowl of sugar.

3.. Make the cocktail.

Add one ounce of raspberry simple syrup to a champagne glass followed by one ounce raspberry liqueur.

Pour the chilled champagne into the glass.

Repeat with a second cocktail.

Any sparkling white wine you’d like to drink. Do keep in mind that you will be adding raspberry simple syrup to these so the cocktails will be on the sweeter side. Thus a dry sparkling wine works better than a sweeter one like a Moscato.

  • For a less sweet drink, add less raspberry simple syrup.
  • You will have enough simple syrup to make about 10 drinks.
  • Rimming the glasses with sugar isn’t a must- just a nice extra touch.
  • Chill the champagne, liqueur and simple syrup prior to making the cocktail.
  • For an extra fancy touch, skewer 4 or 5 raspberries on a toothpick put it on the side of the drink.

Ingredients

  • For the Raspberry Simple Syrup
  • 1 cup of sugar
  • 1 cup of water
  • 1 cup of raspberries
  • For the Cocktails
  • 2 cups champagne
  • 2 ounces of raspberry liquor or raspberry vodka
  • 2 ounces of raspberry simple syrup*
  • Raspberries to garnish
  • sugar to garnish

Instructions

For the simple syrup**

  • Stir the sugar and water together in a small sauce pan over medium heat until sugar dissolves.
  • Add raspberries and reduce heat to medium low.
  • Bring to a slow simmer, stirring regularly.
  • Let simmer until the raspberries break apart.
  • Pour into a jar by holding a strainer over the jar and pressing the remaining raspberries against the strainer with a spoon.
  • Cover and refrigerate.

For the cocktails

  • Dip the rim of 2 champagne glasses in a small bowl or dish of water.
  • Gently press the damp rims of the champagne glasses in a shallow bowl of sugar.
  • Add one ounce of raspberry liquor and one ounce of raspberry simple syrup to each glass.
  • Pour a cup of champagne into each glass.
  • Stir and enjoy.

Notes

It helps to make the simple syrup ahead of time so it's chilled.
Chill the champagne and liqueur first.
You will have enough raspberry simple syrup to make about 10 cocktails.

      You could definitely do them for the holidays because of the pretty color. I think raspberries are really versatile though and make me think of Valentine’s Day and spring and summer. Maybe it’s bc of the Bath and Body fragrance from when we were kids. Remember sunripened raspberry?
