Before then, I was a tea drinker. In fact, I still love me a good cup of tea. Most nights when the weather finally cools off, you can find me snuggled up on the couch, under a blanket with a cup of hot tea and a fall scented candle lit. If I have enough brain power, I’m curled up with a good book. And in a perfect world, a soft autumn rain is falling outside my living room window.

In fact, when I go to the coffee shop, my standard order isn’t a coffee drink. As much as I profess that I love the almighty pumpkin spice latte. Nope, my standard fall coffee shop order is actually a pumpkin spice CHAI latte. That one little word makes all the difference.

Have you ever had Chai tea? It’s like a giant hug in a cup. Seriously. I discovered Chai tea years ago during a particularly bad cold. And a love affair started. Because it’s lightly sweet and just spicy enough to warm the back of your throat, which is amazing if you have a cold.

Then thanks to my favorite barista, I discovered you could make a pumpkin spice chai latte. It has been my new obsession. I want to drink them all day long, all year long for the rest of my life.

But you know how it goes with a small child. I don’t make it out to the coffee shop every day, and even if I could, fancy coffee shop pumpkin spice chai lattes are expensive. And so are diapers and clothes and all the other things my small pumpkin lovin protegee needs to live and grow. So I can’t have them on the daily.

But thanks to International Delight® One Touch Latte™ I can make my own pumpkin spice chai tea lattes as many times a day as I want. All year long. It’s a beautiful thing. Seriously. Coffee shop quality latte complete with flavored, foamy goodness on top at home. Which makes me happy because I can drink my fave drink without leaving my house, and without schleping my kid out and without changing out of my jammies. Pumpkin Spice Chai Latte

A homemade coffee shop style pumpkin spice chai latte

Ingredients

  • 2 chai tea bags
  • boiling water
  • International Delight® One Touch Latte™ in Caramel or Vanilla*

For the Pumpkin Spice Cream**

  • 1 cup of Half and Half
  • 3 tbs honey
  • 3 tbs pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon

Instructions

  • Boil the water for the tea in a kettle. Put the tea bags in a two mugs and fill the mugs about half full with the boiling water. Let steep for 3-5 minutes.
  • While the tea bags are steeping, combine 1 cup half and half with 3 tbs honey, 3 tbs pumpkin puree, 1 tsp pumpkin pie spice, and 1 tsp cinnamon in a small sauce pot. Stir to combine. Heat over medium low heat until warmed through. Add desired amount to mug, but stop when the mug is still 1/3 empty.
  • Shake the International Delight® One Touch Latte™ in Caramel or Vanilla. Press down on nozzle, moving in a circular motion over mug. Add desired amount.
  • Enjoy while hot. Fall rain and good book not required.

Notes

*I like the combo of the International Delight® One Touch Latte™ Caramel flavor with my pumpkin spice chai latte because to me, pumpkin and caramel are a match made in fall heaven. My husband prefers the Vanilla flavor. Either are deliciously tasty.
** You will have some leftover pumpkin spice half and half. Store in the fridge covered for up to 3 days.
