So I have a confession to make. Ready? Here goes. I kind of don’t care about the super bowl minus the fact that THE EPISODE of This is Us will be on after. I’m probably the only person in the greater Philadelphia area that feels that way. But alas. I am not a football person. I am, however, a football food person. Since the Eagles are in the Superbowl this year and my friends and family have worked themselves into a fever pitch over the game, I had to pay tribute to the Eagles with some classic Philly football food. Hence these Philly cheesesteak sliders with homemade beer cheese whiz.

Ok, so another truth. In the truest sense of cheesesteaks, as defined by Will Smith in Fresh Prince, they might not be greasy enough to make a paper bag see through. So for you die hard Philadelphians that want a greasy old cheesesteak, these might not work for you. For people that want a little taste of Philly in your own home, then trust me: these are the sandwiches for you.

Yes, beer cheese whiz. I’ll be brutally honest and say right out that I am not a fan of cheesesteak wit’ Whiz. It does nothing for me. In fact, I’m not a fan of the famous Pat’s or Geno’s steaks. Nope. If I’m gonna be in the city or you know Manayunk, I want a Dellasandro’s steak. They aren’t as famous as Pat’s or Geno’s but they are way better in my honest opinion. These steaks are more Italian style with marinara and real cheese, which is how I ate them from my favorite neighborhood pizza shop growing up. Sauce, onions, peppers, provolone, and pickles. No whiz in sight.

I just can’t get behind it under normal circumstances. Under homemade beer cheese whiz circumstances? I’d eat it right off the spoon. It’s so good. And it is amazing on top of these Philly cheesesteak sliders. AMAZING. It might be my new favorite thing EVER.

And it’s super easy to make too. Just a little beer, some shredded cheddar, a clove or two of garlic, and boom. Best cheese sauce in the world.

The rest of these sliders are really easy to put together too. Instead of using frozen cheesesteak meat, I used one pound of chip steak. You can find it fresh in the meat case at most grocery stores. If you can’t, no worries, just use the frozen steak meat. The frozen stuff is a little on the salty side, so you may want to go a bit easier on the seasoning. However, either way, you just fry it up with a little salt, pepper, and garlic. It cooks super fast. Like under 7 minutes fast.

Put some peppers and onions on the sammies

You add some fried peppers and onions if that’s your thing. They are totally optional, but I like the little extra flavor and crunch from the fast fried veggies.

Put the meat on a toasted, buttered slider roll. Top with veggies. And spoon some of that awesome beer cheese whiz right on top. And boom. Best homemade Philly cheesesteak slider ever. Sure to please the most die hard football fan or those like me that just show up for the food and need a pick me up before watching Jack go up in smoke

Philly cheesesteak sliders with homemade beer cheese whiz are a delicious take on a Philadelphia classic that is sure to please diehard football fans and foodies alike

Ingredients

For the peppers and onions

  • 1 green pepper chopped
  • 1 red pepper chopped
  • 2 small yellow onions or 1 large one chopped
  • 1 tbs olive oil
  • 2 cloves garlic crush
  • salt and pepper to taste

For the meat

  • 1 pound chip steak
  • 2 tbs extra virgin olive oil
  • salt and pepper to taste
  • 1/2 tsp garlic powder

For the beer cheese Whiz

  • 6 cloves of garlic pressed
  • 4 tbs beer
  • 2 cups of cheddar cheese

For sliders

  • 8 slider buns
  • 2 tbs melted butter

Instructions

For the veggies

  • Chop all the veggies into equal size pieces. Heat a tbs of olive oil over medium high heat in a large pan. Add veggies, pressed garlic, and salt and pepper. Cook for about 3-5 minutes, stirring constantly to prevent burning. Veggies are done when they are soft. Set aside.

For the meat

  • Heat a pan with 2 tbs olive oil over medium to medium high heat. Add the beef. Season with salt, pepper, and garlic powder. Cook for 7-8 minutes, stirring occasionally to prevent burning. Meat is done when brown and slightly caramelized.

For the beer cheese

  • Heat a small pan or pot over medium low heat with 4 tbs of your favorite beer, 2 cups of shredded cheddar and 6 tbs pressed garlic. Stir until melted. Remove cheese from heat when melted.

For sliders

  • Cut 6 slider rolls in half and brush insides with melted butter. Toast by putting under the broiler for 30 seconds, butter side up. Remove. Assemble sandwiches by putting an equal portion of meat, veggies if desired, and cheese on each. Use extra cheese for dipping.

*This recipe comfortably makes 8 sliders. Feel free to double or triple to feed a crowd

      What did you think of This is Us?? I liked (read cried a whole lot more lol) on Tuesday night when we saw Jack’s funeral. I actually told my husband at the end of the episode that my face hurt from crying so hard. Lol.
