Welcome to the last weekend in January. Say it with me: THE LAST WEEKEND IN JANUARY. Ok shouty caps over. I’m sorry but this calls for a celebration. And clearly a blood orange mimosa. Because cocktails.

And not only are they cocktails, they are pink cocktails that are acceptable at breakfast and brunch because they are mimosas.

Do you still do brunch? I know Mariah Carey went all antibrunch in favor of linner awhile back on twitter. She definitely hasn’t killed brunch for me. I love being all pretend fancy and having brunch on the weekends. There’s a place near me that my sister and I go to sometimes for the inexpensive mimosas and the heuvos rancheros. Always fun.

And for the record, while I still love me some brunch, I can 100 percent get behind the idea of linner. Mariah said it was late dinner. Well, last night I definitely ate dinner at 11:30 pm. That happens on the reg in my house. See, when we have dinner the 3 of us, my kid ends up on my lap, spilling food and eating all my food off her plate. Even though we have the exact same thing. I’ve told her no, redirected endlessly, but it always happens. So I welcome any other suggestions to get through this phase. And nights when we are planning to eat crock pot chili, that’s a hard no. So linner it is.

But it doesn’t have to be an either or situation when it comes to linner and brunch. I could have linner tonight and be game for brunch tomorrow. Especially if it meant I was having a blood orange mimosa.

They are super easy to make. Just juice two blood oranges. Or if you aren’t feeling like juicing and can find blood orange juice in the store go that route.

Then pop some bubbly and pour it into glasses.

Pour some champagne. Or Rose would be awesome too

Add your blood orange juice and a splash of orange liquor and boom. Blood orange mimosas. #brunchgoalsachieved

Blood Orange Mimosas

Blood Orange Mimosas

Blood orange mimosas are the perfect cocktail for brunch or any easy winter day at home
Prep Time: 5 minutes
Total Time: 5 minutes

Ingredients

  • 2 large cups of bubbly white wine or champagne*
  • 2 ounces of orange liquor**
  • the juice of 2 blood oranges
  • blood orange slices for garnish
  • rosemary for garnish

Instructions

  • Pour the blood orange juice into two champagne glasses. Add the orange liquor and stir. Fill the glasses up 3/4 of the way with champagne or sparkling wine. Garnish with a slice of blood orange and sprig of rosemary. Enjoy!

Notes

*Feel free to use your favorite sparkling wine. I used champagne, but I could totally see using Rose or Prosecco.
**Grand Marnier or orange vodka would both be excellent choices
