I’ve always had a thing for nachos. Saucy nachos, loaded nachos, all kinds of nachos. These barbecue rib nachos- let’s just say they totally fit my nacho thing.

I know it sounds weird to say that nachos hold a special place in my heart, but they do. I grew up as the oldest of 3 siblings. As the oldest, I was the chief maker of snacks and easy lunches and dinners. My specialties growing up: doctored scrambled eggs, doctored boxed mac n cheese, microwave french fries, and nachos. We’d carry my resulting delicacies downstairs and eat them in front of the tv where we watched Rugrats or classic 90s Disney movies.

Now being that I started making nachos to share with my siblings at the ripe old age of about 9, my earliest nachos were kind of simple. Basically I nuked nacho cheese flavored chips and cheddar cheese and called the resulting snack nachos.

They were delicious. Over 20 years later and my sister and brother still talk about them and how awesome they are. And they were awesome in their simplicity. Kind of like these barbecue rib nachos are.

These nachos aren’t like other nachos that are loaded with lots of stuff. Nope, they don’t need it. Why? Because the slow cooked Smithfield Extra Tender Back Ribs in a sweet and spicy homemade barbecue sauce is just so good. SO GOOD. While you could load the nachos up with all the fixings, the chips, cheese, and meat are enough to make me totally happy.

Plus, this recipe is the perfect make ahead summer entertaining meal. We grilled the ribs low and slow over charcoal the day before making the nachos and having friends over to help eat them all. Barbecue Rib Nachos make the perfect summer party food

Ingredients

For the Sauce:

  • 3 cans peaches
  • 2 adobe peppers
  • 5 teaspoons chili powder
  • 3 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 3 teaspoons garlic powder
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 4 teaspoons cumin
  • 1/2 cup molasses
  • 3 teaspoons vinegar
  • 1/3 cup brown sugar

For the Rub:

  • 1/4 cup evoo
  • Salt and pepper
  • 1 T garlic powder
  • 2 T paprika
  • 1 t cayenne pepper
  • 2 T chili powder
  • 1 T cumin
  • 1/4 cup brown sugar

For the nachos

  • 3-4 pounds Smithfield extra tender ribs cut from the bone and shredded
  • 1 large bag of tortilla chips
  • 4 cups of cheddar cheese
  • the reserved barbecue sauce

Instructions

For the sauce

  • Drain about half of each can of peaches and add remainder to blender with peppers and garlic.Blend them until smooth.
  • Combine all sauce ingredients in pot and cook over low heat for 1-2 hours. This sauce gets better the longer it cooks.

For the ribs

  • Combine all rub ingredients in bowl. Rub directly on to ribs. Brush sauce on over ribs. Cook over indirect heat of coals for 4-6 hours or until the meat is falling off the bone, brushing with more sauce periodically.

For the nachos

  • Remove the rib meat from the bones and set aside. Layer 1/3 of the chips with 1/3 of the cheese and reserved barbecue sauce. Repeat 2 more times until the nachos are built. Broil for 90 seconds or until the cheese is melted and bubbly. Garnish with green onions and jalapenos if desired. Enjoy!

Notes

* If desired substitute 2 bottles of your favorite barbecue sauce

  10. OMG can I just say how amazing these look? One of my friends was actually just telling me about these ribs- did you say they are available at Walmart?
    I also really love how you cook your nachos in a cast-iron. I’ve never even considered it but I love how it contains the mess and probably provides a lot of browning down inside!
    Do you serve it inside the cast-iron or do you transfer it to another dish?

      Yes, these are available right in the meat case at Walmart. Super easy to find! And yep, we served them in the cast iron. Less mess to clean up later. Just be aware that cast iron gets very hot and retains it heat!
